Coconut Biscuits (Congolais)

0,25 lb (3,5 oz / 100 gr) grated coconut
4 egg whites
0,15 lb (2,5 oz / 70 gr) brown sugar


- Preheat the oven (400 F)
- Cover baking sheet with parchment paper
- beat the egg whites until stiff with a pinch of salt
- Gradually add sugar, continuing to beat
- Then gently stir the coconut
- place balls of coconut mixture on the baking sheet (around 2.5 in diameter)
- Cook for about 13/15 mins by monitoring so that they do not color too much
- remove from baking sheet and let cool at room temperature
