shortcrust pastry

7 oz (200 gr) flour
4 oz (100 gr) butter
1 pinch salt
1 Egg
2-3 tbsp cold water
1 tbsp (optional and only for sweet preparations) sugar


- Put the flour, butter and salt into a large bowl
- rub together delicately using fingertips until the mixture reaches a sandy texture
- add the egg and water (Eventually the sugar)
- work the liquid ingredients into the flour and butter mixture
- bring the dough together and press to form a ball
- Turn onto a lightly floured surface and knead gently with the palms of the hands
- Wrap the dough in plastic wrap
- chill it in the fridge for about 2 hours before using
