Coconut Biscuits (Congolais)

- Preheat the oven (400 F)
- Cover baking sheet with parchment paper
- beat the egg whites until stiff with a pinch of salt
- Gradually add sugar, continuing to beat
- Then gently stir the coconut
- place balls of coconut mixture on the baking sheet (around 2.5 in diameter)
- Cook for about 13/15 mins by monitoring so that they do not color too much
- remove from baking sheet and let cool at room temperature

Alsatian Christmas biscuits

- Leave the butter at room temperature until it is nice and soft
- In a bowl, combine the flour with cinnamon, sugar, pinch of salt and mix
- Add the egg and mix well
- Add the butter cut into small pieces and rub together delicately using fingertips until the mixture reaches a nice texture
- Place the dough into a ball and let rest in the fridge for at least 1 hour
- Flour the dough ball and place on a floured surface
- Roll out the dough with a rolling pin to have a paste of about 2 mm thick
- Using cookie cutters of different shape, cut out biscuits and place them on a baking sheet lined with parchment paper
- Gently gather the dough together in your hands and pat it out again, cutting biscuits until there is no dough left (if the dough softens too much and becomes too difficult to spread, give it to cool before spreading)
- Bake in a hot oven for about 13 minutes
- Cool cookies on wire rack
- Sprinkle with icing sugar (optional)



Tips & Suggestions
- Dip the cookie cutters in flour before using them to cut the dough, it facilitates the release

- Put the flour, butter and salt into a large bowl
- rub together delicately using fingertips until the mixture reaches a sandy texture
- add the egg and water (Eventually the sugar)
- work the liquid ingredients into the flour and butter mixture
- bring the dough together and press to form a ball
- Turn onto a lightly floured surface and knead gently with the palms of the hands
- Wrap the dough in plastic wrap
- chill it in the fridge for about 2 hours before using

Sauteed apples

- Peel the apples, remove the core and detail into quarters or slices (not too thin)
- Sprinkle apples with lemon juice
- In a pan, add the apples with the butter and cook over medium / low heat for about twenty minutes until the apples are golden brown
- Halfway through cooking, add sugar, pepper and cinnamon

Serve with white pudding, duck breasts, a roast pork ...

- Coarsely chop the hazelnuts
- Peel the apples, remove the core and cut into slices or diced
- Soften the butter and mix it with the sugar until the mixture whitens
- Add eggs one at a time while mixing
- Add the vanilla sugar, almond powder and mix
- Add the flour, baking powder and mix to a smooth paste
- Add chopped hazelnuts and mix one last time
- Fill muffin tins about ¾ full
- Top with apple pieces
- Bake in a hot oven for 20 minutes
- Mix the apricot jam with 1 tbsp water and heat in the microwave
- brush the tops of each muffin with the warmed apricot jam using a pastry brush
- Let cool to room temperature before removing from pan

Chorizo and goat cheese Bruschetta

- Preheat the oven (518 F grill)
- Cover the baking tray with a sheet of baking paper
- Remove the bread slices on a baking sheet
- cut the goat's cheese into slices
- Cut the chorizo into slices
- Peel the garlic, cut in half
- Rub the bread with the garlic and finely chop the remaining
- Using a pastry brush, brush the slices of bread with olive oil
- Spread pesto rosso and chopped garlic on the bread slices
- Add goat cheese slices
- Cover with slices of chorizo
- Sprinkle with grated Parmesan
- Sprinkle with oregano and chives
- Give a few grinds of pepper
- Bake in a hot oven for 10 mins until the mozzarella is melted

Serve with green salad
